ICYMI: High Desert Sauce Co Pulls Me Back In

It's been a very long time since I posted and I have no good excuse why. I kept saying I'd get back into it and I just didn't. It took the good folks at High Desert Sauce Co to get me back in the game.

I first heard about High Desert Sauce Co probably over a year ago when I would see suggested posts from them on Instagram. I was intrigued and followed their account but I didn't buy anything at the time. Fast forward to a few months ago and I saw them advertising incredible deals for a limited time, and I couldn't pass up the chance to get several sauces. I was not only impressed by the sauces, but by the friendly nature of owner Zac Perkins.

Recently he released a new Black Label sauce called Tikk-Hot Masala. It is more expensive than his other sauces but to be fair, it's much more complex as well. I decided it was worth buying after my previous experiences with the company. To say I was not disappointed would be an understatement.

Ingredients: Roma Tomato, Unsweetened coconut milk, green chili, onion, ghost pepper, white vinegar, agave nectar, tomato paste, garlic, fresh ginger, Carolina Reaper, kosher salt, Peppercorns, cumin seed, garam masala, turmeric,  coriander, apple cider vinegar

The color and aroma are insane. It's thick and very creamy. I get some tomato and onion. The turmeric and garam masala are bringing massive flavor! This is like Tikka Masala on a spoon, and I mean that in the best way possible. There's not much texture beyond creamy but there are small pieces in the sauce. The heat was definitely delayed. It didn't even start to burn for about 5 seconds. About a minute in it was still climbing but not as quickly. I felt a back of the tongue and throat burn like you expect from ghost peppers.

Heat I'll give this a 4-5 on my scale. Nose only just barely started to run. Flavor I'll give this a 9. I want this on all kinds of meat and/or veggie rice dishes, wings, even pizza or tacos.

Great job, Zac!
